Recipe for June 1998 TOFU BREAKFAST SCRAMBLER

2 -3 cups pre-cooked brown rice
1 lb. firm TOFU
1 med. onion - cut in half - cliced along longitudinal lines
1 carrot - cut into match sticks
1 - 2 stalks celery - chopped fine
1 tbls toasted sesame oil
1 - 2 tbls tamari or shoyu
Turmeric - to taste
Small piece of Diakon Radish - cut into match sticks 

Place sesme oil into large skillet, I like to use a black iron for this dish.

Saute the veggies until partially done, crumble the tofu in with the veggies. Tofu must be cooked as it is raw when you buy it. After the tofu has had time to cook (I heat mine thoroughly) add the turmeric tamari, turmeric adds a yellowish color to the tofu. Almost makes it look like "REAL" scrambler eggs.

Turmeric is a related to Ginger, has a slightly bitter & peppery flavor, so be careful how much you use, a little goes a long way.

Add the pre-cooked rice & mix together. Don't mix any more than necessary, as the more mixing you do the dish will become mushy, simmer on low till the rice is heated.
